In a bowl mix cream cheese, cream, grated cheese, shallots, creamed corn and bacon; mix well.
Cut off the top of the cob and remove the centre tearing bread into chunks being careful not to take too much away from the bottom and sides. Place the bread that you removed to the side for the moment.
Pour cheese mixture into the cob then place in a baking dish and bake for 30 minutes.
Cut the french stick into slices to dip.
Remove cob and place it's lid back on and put extra bread around the outside of cob
Place cob back into the oven and back for a further 15 minutes. Serve hot.
