    Baked potatoes that are grated and mixed with tinned cream of chicken soup, melted butter and sour cream then topped with heaps of grated cheese and baked. Not for those who are watching their weight!

    Serves: 4 

    • 6 medium/large potatoes, about 12cm long, skin on
    • 1 (400g) tin cream of chicken soup
    • 185g melted butter
    • 500ml sour cream
    • 1/3 cup finely diced onion
    • 1 1/2 cups (185g) grated cheese

    1. Wash and prick the potatoes with a fork.
    2. Bake potatoes until cooked; an inserted fork should have no resistance. It will take just over an hour at 180 degrees C.
    3. Peel slightly cooled potatoes and grate.
    4. Mix together the tinned soup, butter, sour cream and onion in a large bowl. Add the potatoes and mix well.
    5. Place into a greased 23x33cm cake tin and flatten with a spoon. Sprinkle the top with cheese.
    6. Bake at 180 degrees C for 35-40 minutes.
