Toasted muesli for breakfast! Easy to make at home where you know what goes into it and can adjust to your favourite dried fruits.


Serves: 10 

  • 6 cups rolled oats
  • 1 cup apple or pear concentrate, warmed in the microwave
  • 150g shredded or desiccated coconut
  • 200g slivered or flaked almonds
  • 200g macadamias, roughly chopped
  • 200g pecans or walnuts, roughly chopped
  • 200g dried apples, rings cut into eights
  • 200g dried pears, halved lengthways and sliced crossways (alternatively use apricots)
  • 100g craisins
  • 200g sultanas
  • 100g dates, seeded and sliced
  • 100g pitted prunes, sliced
  • 100g dried kumquats, roughly chopped
  • 1 cup pumpkin seeds
  • 1 cup hulled sunflower seeds
  • 1 cup linseed

Preparation:10min  ›  Cook:25min  ›  Ready in:35min 

  1. Preheat oven 180 degrees C.
  2. Spread rolled oats onto 2 trays and pour warmed apple concentrate over the top. Stir carefully and place in the oven.
  3. Cook for 20-30 minutes stirring every 5 minutes. Keep doing until the oats are golden.
  4. Toast the coconut on a tray in the oven for 5 minutes.
  5. Put aside oats and coconut to cool and start on the fruit and nuts.
  6. Roughly chop all fruits and nuts and put into a bowl.
  7. Add the oats and coconut then stir well.
  8. Keeps up to 2 months in an air tight container.
