Crash Hot Potatoes

This is a great alternative to roast potatoes. So simple but impressive. You can use an egg flip to squash them down or any heavy implement. Just give them a good hit once.

- 4 small round potatoes
- 1 dash virgin olive oil
- 1 teaspoon sea salt
- 1 pinch cracked pepper
- 1 teaspoon cumin or caraway seeds
- 1 tablespoon diced fresh thyme or rosemary

- Preheat oven 250 degrees C.
- Bring the potatoes to the boil in salted water then simmer 15 minutes. Just cook, don't soften.
- Drain and transfer to lightly greased baking tray.
- Squash potatoes flat then brush tops with oil, sprinkle with salt, pepper, cumin and thyme.
- Bake on top shelf for 20 minutes until crisp.
