    This is a delicious Thai style chicken pie. I always get complements and people can't believe they are home made. This recipe is for individual pies but you can make family pies or even appetiser size pies for parties.

    Ingredients
    Serves: 4 

    • 500g pumpkin, peeled and diced 1cm
    • 3 carrots peeled and diced 1cm
    • 1 tablespoon olive oil plus extra to grease
    • 20g butter
    • 3 onions, diced
    • 3 garlic cloves, crushed
    • 1 lemon, zested
    • 3cm piece ginger, peeled and grated
    • 1 tablespoon red curry paste
    • 2 teaspoons sambal oelek
    • 1kg chicken breast, cut into 2cm cubes
    • 425ml coconut milk
    • 1 red capsicum, cut into 2cm pieces
    • 1 cup diced coriander
    • shortcrust pastry, for pie bases
    • puff pastry, for pie tops
    • milk, to seal pastry tops.

    Directions

    1. Steam pumpkin and carrot until cooked but still firm.
    2. Heat oil and butter in a large saucepan. Add onions and cook for 3-4 minutes until soft but not coloured.
    3. Add the garlic and cook for a further minute then add lemon rind, ginger, curry paste and sambal oelek. Cook for 1-2 minutes until fragrant.
    4. Add the chicken and cook 3-4 minutes or until flesh is just opaque.
    5. Add coconut milk to cover chicken (if not sufficient add a little water or chicken stock).
    6. Continue cooking for about 5 minutes or until chicken is cooked through.
    7. Add the pumpkin and carrot mixture along with coriander then season with salt to taste.
    8. Adjust chilli as required.
    9. Fill individual pie cases with shortcrust pastry. Brush edges with milk.
    10. Place filling into cases and top with puff pastry. Press to seal edges and cut a vent into top of pie.
    11. Cook for 20-30 minutes in moderate oven

    Yum! Spicy, Tasty, Beautiful aroma. I made as individual pies and froze the 3 leftovers. Came home one night to smell the most wonderful aroma coming from the kitchen. Opened the door and found that my husband had defrosted them and was giving the pies to the kids (3) for dinner. Was devastated that I missed out!!! 😿. Time to make more I think. - 22 Feb 2015
