Mussels in Coconut Cream

    This recipe is lovely as an entree or small dinner. It has been in my family for a long time and I hope you enjoy it as much as we do.

    Serves: 4 

    • 10 mussels, in the shell
    • 2 tomatoes, quartered
    • 2 medium size onions, diced
    • 2 (400g) tins coconut cream

    Preparation:15min  ›  Cook:10min  ›  Ready in:25min 

    1. Wash the shells of the mussels then place in a saucepan.
    2. Place on top of the mussels the tomatoes and onions.
    3. Pour in the coconut cream and cook with a lid on until the mussels open then serve.
