These are honey and banana muffins with a butter and honey glaze on top. I sort of half made them up after experimenting with a banana muffin recipe I forgot to add the butter in and rather inventively poured it over the top.


Serves: 8 

  • 1 cup mashed banana
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 2 tablespoon honey
  • 1 1/2 cups (185g) flour
  • 1/4 cup (50g) brown sugar
  • 1/4 cup (60g) white sugar
  • 3 teaspoons baking powder
  • Topping
  • 1 tablespoon butter
  • 1 teaspoon honey

Preparation:10min  ›  Cook:10min  ›  Ready in:20min 

  1. Preheat oven to 180 degrees C.
  2. Beat together banana, egg, vanilla and honey then stir in dry ingredients.
  3. Place in the muffin tray and bake for 5 minutes.
  4. Topping: Melt topping ingredients together in a small saucepan then pour over the half cooked muffins.
  5. Cook muffins until springy, usually 5-6 minutes.

Just ate a hot one of these. Nice. Have a wee sticky patch on bottom from the glaze (may have been due to a bit more of the glaze than the recipe) but its nice. I managed to make 10 good sized ones and needed a good 10 mins cooking time after the initial 5 mins. - 29 Jul 2011
