Tasty Vegetable Soup

    A tasty, flavourful vegetable soup that is quick and easy to prepare and as a result you will be wanting more.

    Serves: 4 

    • 2 carrots peeled and sliced
    • 1 onion, whole
    • 1 cup peas
    • fresh parsley diced
    • 3 tablespoons oil
    • 2 tablespoons salt
    • 4 - 5 cups water
    • Dumplings
    • 2 eggs
    • 1 cup (125g) flour
    • 1 pinch salt, to taste
    • 1/2 cup (125ml) water

    1. In a medium saucepan heat oil. Add the carrots then saute for 10 minutes until they are tender.
    2. Add the peas and the peeled whole onion then saute for 1 minute.
    3. Add the water, parsley and salt, to taste.
    4. Bring to boil then simmer for 25 minutes or until vegetables are completely soft (onion does not have to be soft it just adds more flavour).
    5. Dumplings: Mix flour, eggs, water and salt then form into dough ball.
    6. Pinch bits off the dough then 2 minutes before the soup is ready drop them in.
    7. When the dumplings are cooked through serve.
