Mexican Capsicum and Frankfurts

    Serves: 4 

    • 4 tablespoons of oil
    • 1 onion, diced
    • 1 pinch salt, to taste
    • 5 green or yellow capsicums, sliced
    • 4 tomatoes, diced
    • 6 frankfurts, sliced
    • 1 cup cooked rice

    1. Heat oil in a medium saucepan then add and saute onions. Add salt.
    2. Once the onions are transparent add the sliced capsicums. Cover and cook on medium heat for 5 minutes.
    3. When the capsicums are tender add the tomatoes. Stir, cover and cook on low heat for 10 minutes.
    4. The tomatoes will become mushy and the capsicums will be soft. Add the frankfurts and cook for a further 10 minutes.
    5. Serve on the cooked rice.
