Bake croissants (if frozen) as per box directions. If the croissants are fresh, warm them for five minutes in a moderate oven.
Cut each the breast fillet in half lengthways and then again crossways. Season the four pieces of chicken with vegetable salt. Heat the olive oil and cook chicken and bacon on a medium-high heat until golden brown.
Cut the croissants in half then fill with chicken, bacon, sliced avocado, cheese and a dash of light sour cream
