Dukkah is a traditional Egyptian recipe for a coarse spice blend that traditionally you dunk olive oil coated bread into. It is also good used as a rub in fish, lamb or chicken.

Serves: 24 

  • 1/2 cup cashews
  • 1/2 cup hazelnuts
  • 1/2 cup sesame seeds
  • 2 tablespoons whole coriander seeds
  • 2 tablespoons whole cumin seeds
  • 2 tablespoons freshly ground black pepper
  • 1 tablespoon fennel seeds
  • 1 teaspoons flaked sea salt

Preparation:20min  ›  Cook:5min  ›  Ready in:25min 

  1. In a dry frypan add the nuts and seeds and toast until fragrant. Cool.
  2. In a morter and pestal add the seeds and gently pount to break up but don't over grind. Add salt and mix.
  3. Store in an air-proof container until needed.
