    Quick and easy way to serve pork. I don't usually like pork or pineapple but I can't get enough of this recipe. Goes well with rice and green vegetables.

    Ingredients
    Serves: 4 

    • 500g pork, diced
    • 2 tablespoons cooking oil
    • 1 cup celery, sliced
    • 1 cup carrots, sliced
    • 2 onions, sliced
    • 1 (400g) tin pineapple pieces, juice and pineapple
    • 2 tablespoons cornflour
    • 2 tablespoons vinegar
    • 1-2 tablespoons soy sauce
    • 2 tablespoons brown sugar
    • 1 tablespoon water
    • 1 1/2 cups chicken stock
    • 1 teaspoon salt
    • 1/4 teaspoon pepper
    • 1/4 teaspoon powdered ginger

    Directions
    Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

    1. Heat oil. Add pork and cook for 10 minutes stirring frequently.
    2. Add celery, carrots, onions, salt pepper, stock and pineapple juice and cook until pork is tender.
    3. Blend cornflour with water, vinegar, sugar, ginger and soy sauce.
    4. Stir until the mixture boils. Simmer 2 minutes.
    5. Add to meat and vegetables. Keep some pineapple pieces for garnish. Add remainder to pork mixture.

    this was delicious, I added some garlic stock powder and two tbsps of Tuimatoe sauce, kiwi stuff, yummy thanks for a great reciepe. - 01 Jul 2012
