White Christmas is a slice made from rice bubbles, coconut and mixed fruit that is easy to prepare and great for kids.


Serves: 10 

  • 3 cups rice bubbles
  • 1 cup desiccated coconut
  • 1 cup powdered milk
  • 1 cup mixed fruit
  • 3/4 cup icing sugar, sifted
  • 1 teaspoon vanilla essence
  • 225g copha

Preparation:10min  ›  Cook:5min  ›  Ready in:15min 

  1. Mix rice bubbles, coconut, powdered milk, fruit, sugar and essence in a bowl.
  2. Melt copha then add to the mixture; stir well.
  3. Put mixture into a baking tray and place in fridge until set.
  4. Cut into single serve sized pieces and store in an air-tight container.

For those who have queries about copha this is from Wikipedia; Copha, a registered trademark of Peerless, is a form of vegetable fat shortening made from hydrogenated coconut oil. It is 100% fat, at least 98% of which is saturated. It also contains soybean lecithin. It is popular in Australia where it is used in many foods for children, such as rocky road, and chocolate crackles, which are made from Rice Bubbles, copha and cocoa powder In New Zealand, it is marketed as Kremelta. Known in Europe as coconut fat, it is available either in its pure form, or in solid form with lecithin added as an emulsifier. Great recipe, tweaked it to get the hydrogenated copha out, and decreased the sugar to 1/2 cup (only because I don't like things too sweet) A must for Christmas. - 05 Dec 2010
