Jamaican Carrot Spice Loaf

Wait till you smell this baking in the oven! This recipe has been passed down in my family and you will just love it. It has a rich, spicy flavour that is truly unique. Top with cream cheese icing or eat as is!


Serves: 8 

  • 2 eggs
  • ½ cup (125g) sugar
  • ½ cup (125ml) vegetable oil
  • 1½ cups (200g) flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • pinch salt
  • ½ teaspoon cinnamon
  • ¼ cup (30g) raisins
  • ¼ cup (30g) nuts (optional)
  • 1 cup finely grated raw carrot
  • 2 tablespoons orange juice
  • 1 teaspoon grated orange rind
  • 1 teaspoon grated ginger

Preparation:10min  ›  Cook:1hour  ›  Ready in:1hour10min 

  1. Preheat oven to 180 degrees C. In a large bowl beat eggs and add sugar. Beat until thick. Add oil gradually and continue beating until thoroughly combined. Stir in flour and the rest of the dry ingredients including raisins and nuts.
  2. In a small bowl, combine orange juice, rind and ginger and carrot then combine with the main mixture. Stir till well blended. Pour batter into well greased loaf tin.
  3. Bake for 1 hour or until toothpick inserted comes out clean.

Great!! I printed off this recipe 2 years ago and got around to making it yesterday. I used sultanas as didn't have raisins and also used chopped pecan nuts. Only one word for it YUMMY - 21 Jan 2012
