Delicious Low-Carb Breakfast Casserole

    Sink your teeth into this wonderfully tasty and filling breakfast. A different way with eggs and super easy to prepare, it will leave you full for hours. You can use this recipe as a base to add some of your favourite veggies, serve with bacon or just have as is.

    Serves: 6 

    • 6 thin sausages, diced
    • 1/4 teaspoon garlic powder or 1 garlic clove, finely chopped
    • 1 tablespooon oil
    • 12 eggs
    • 1 small white onion, diced
    • 1 small green capsicum, chopped
    • 2 tablespoons deli ham, torn or cut into pieces
    • 1 cup (125g) grated cheese
    • 1 tablespoon vegetable oil
    • salt and pepper to taste

    1. Preheat oven 180 degrees C. Lightly grease a medium sized casserole dish. Brown sausages and garlic powder in oil. Set aside.
    2. In a large bowl, beat eggs well. Add onion, capsicum and ham and mix well. Stir in cooked sausages and cheese. Pour or spoon into the casserole dish and place on the middle rack in the oven.
    3. Bake 35-45 minutes or until knife inserted into centre comes out clean.
