Hot Cobb Loaf Dip

    A hot entree type dish that is served with the dip made inside a hollowed out cobb loaf, very very tasty. A great starter at any dinner party.

    Serves: 6 

    • 1 cobb loaf or round loaf of bread
    • 250g cream cheese, diced
    • 4 rashers bacon, rind removed, diced and cooked
    • 6 spring onions, diced
    • 250g sour cream
    • 250g thickened cream
    • 1 1/2 cups grated cheddar cheese

    1. Pull out bite size pieces of bread from loaf until the loaf is hollow but the shell is intact.
    2. Add the cream cheese, spring onions, bacon, sour cream, cream and cheese into a bowl then mix well.
    3. Heat the bowl on high in microwave for about 2 minutes.
    4. Place bread shell into a baking tray with the tufts of bread arranged around the shell. Pour the mixture into hollowed bread shell and bake in moderate oven for about 20 - 25 minutes until the mixture has melted.

    Almost the same way as I make it - hadn't tried it with the sour cream! Usually I just use all cream - 350ml  -  21 May 2012
