Luscious Lemon Chicken

Delicious lemon basted chicken roasted to perfection! It's tasty and good for you!! I serve with salad and sometimes couscous.

- 4 chicken breasts, bone in and skin on
- 1/2 teaspoon oregano
- 1/2 teaspoon garlic powder
- 60g butter
- 1 pinch salt and pepper, to taste
- 2 lemons, juiced and zested

- Preheat oven to 200 degrees C.
- Sprinkle chicken with oregano and garlic powder.
- Melt butter in roasting tray.
- Add chicken and turn to coat with butter.
- Season with salt and pepper.
- Roast chicken skin side up for 30 minutes.
- Squeeze lemon juice and sprinkle the zest over chicken. Continue to cook for a further 10 minutes.
- Cover and let rest for 5 minutes.
- Serve with a tossed green salad.
