Pork and Peaches Stir Fry

    A yummy stir fry that's quick and easy to make, this one's sure to impress! Pork, vegetables, and peaches are stirfried over high heat to produce a dish that can be served with either noodles or steamed rice.

    Serves: 4 

    • 1/4 cup (60ml) lemon juice
    • 1/4 cup (60ml) soy sauce
    • 1/2 teaspoon ground ginger
    • 1/2 teaspoon garlic powder or 1 clove garlic, chopped
    • 450g diced pork
    • 2 teaspoons peanut oil, or sesame oil
    • 1 large onion, diced
    • 1 large carrot, sliced
    • 1 cup chopped broccoli (or other vegetables of your choice)
    • 1 (400g) tin sliced peaches, with juice
    • 1 tablespoon plain flour

    1. In a glass bowl or casserole dish, combine the lemon juice, soy sauce, ground ginger and garlic. Place the pork into the dish, cover and refrigerate for several hours or overnight.
    2. Heat the oil in a wok over medium-high heat. Add the pork, marinade and onion, and cook stirring constantly until the meat is cooked through. Add the vegetables and cook for a few minutes, then add the peaches with the juice, and bring the mixture to a boil. Sprinkle the flour over the mixture, and stir in. Cook, stirring, until the sauce thickens. Serve over rice or noodles.

    I thought twice about this because of the peaches but I am glad I went ahead anyway. I added a few more veggies as I was doing one of those clean the refrigerator things and blanched them for a few minutes but they still stayed firm. I added mushrooms, snow peas and zucchini.     This was a pretty good recipe and I will make it again when I am tired of the same old stir-fry. For lack of pork available, I used chicken and added a few other veggies like frozen snow peas, mushrooms and a 1/2 red bell pepper. It is sweet but not too sweet. My hubby like the mixture but pushed the peaches to the side of his plate (he does like warmed peaches).
