Sweet Onion and Tomato Spaghetti

    I love the sweet flavour onion gets when slowly cooked, this pasta sauce combines this with tomatoes to create a basic and tasty vegetarian spaghetti sauce.

    Serves: 4 

    • 2 tablespoons olive oil
    • 4 large brown onions, sliced
    • 2 cloves garlic, crushed
    • 1 tablespoon tomato paste
    • 1 (400g) tin whole peeled tomatoes
    • salt and pepper, to taste
    • 10 leaves of chopped fresh basil
    • 1/4 cup water
    • 500g spaghetti

    Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Heat oil in frypan hen brown onions and garlic until soft. Add tomato paste and peeled tomatoes then stir until mixed. Add salt, pepper and basil then add water, cover and let simmer for 20 minutes until sauce thickens.
    2. While the sauce is simmering, cook spaghetti in salted boiling water as directed. Drain and mix with sauce in a large serving dish.

    When I made this recipe I did make some changes. Instead of 1 tablespoon of tomato paste I put in 2 tablespoons. I also put in 1 and half cups of water instead of a quarter cup. Also, sometimes tomatoes from a can can taste kind of yucky so I added 5 fresh tomatoes. I do agree that there was not enough sauce so next time I think I'll add more sauce.
