I make this at least twice when blueberries are in season and not too pricey. Makes a great coffeecake or dessert.
1/2 cup (120ml) milk
2 cups (250g) flour
1 teaspoon baking powder
300g fresh blueberries
pinch ground cinnamon
60g butter, softened
- Preheat oven to 190 degrees C. Cream together 150g sugar, butter and egg.
- In a separate bowl mix together 2 cups flour, baking powder and salt. Stir into sugar mixture, alternating with milk. Stir in blueberries. Pour into greased 23cm square pan.
- To make topping: Combine sugar, flour, cinnamon and butter. Sprinkle over cake batter.
- Bake at 190 degrees C for 25-30 minutes.
