Zucchini with Parsley, Garlic and Lemon

There's a substantial helping of vitamin C in every serving of this simple side dish. Add more garlic if you like.

I really like this recipe. It's very quick to make, filled with Vitamin C and tastes lovely as a quick winter breakfast as well as a vegetable side dish. Really nice!

I don't really care for zucchini because I have bad memories of my mother overboiling it into 'glug' when I was a kid but, this recipe was delicious! I ate about two whole zucchini by myself!
