One of the leanest of all meats, skinless chicken breast is a superlative protein source for the health-conscious. B vitamins are a healthy bonus.

Ingredients
1/2 cup dry white wine
3 teaspoons olive oil
4 cloves garlic, peeled and lightly crushed
I tablespoon fresh rosemary leaves
1/2 teaspoon pepper
3 strips orange zest (8 x 1cm)
Salt
4 skinless, bone-in chicken breast halves (250g each)
Preparation method
1.
Combine the wine, oil, garlic, rosemary, pepper, orange zest and a pinch of salt in a shallow dish. Add the chicken, turning to coat. Cover and marinate in the refrigerator for at least 3 hours, turning the chicken several times.

Preheat the griller. Reserving the marinade, grill the chicken, bone-side-up, 15 cm from the heat for 8 minutes. Turn the chicken over, brush with the marinade, and grill for 7 minutes or until cooked through.
