In a large bowl, combine the oil, vinegar, garlic, herbs, pepper and Tabasco sauce. Cut the cheese across into 12 slices. Add to the bowl and toss to coat with the marinade. Cover and leave to marinate for at least 1 hour.
Preheat the grill. Cut the bread into twelve 2cm slices and place on a grilling tray. Toast on one side for 2–3 minutes.
Drain the cheese, reserving the marinade. Turn the toast over and place a slice of cheese on top of each. Grill for a further 1–2 minutes.
Make a bed of salad leaves on each plate. Place the cheese-topped toasts on the leaves and spoon over the reserved marinade.
