Red Wine Vinaigrette Dressing

A fresh vinaigrette dressing is perfect for salads or marinades. Freshly chopped herbs can be stirred into the finished dressing.

Serves: 8 

  • 1/2 cup olive oil
  • 1/2 teaspoon salt
  • freshly ground black pepper
  • 1 1/2 tablespoons red or white wine vinegar or lemon juice
  • pinch of caster sugar
  • 1/2 teaspoon mustard powder or 1 teaspoon Dijon mustard
  • 1/4 teaspoon caster sugar
  • salt and freshly ground black pepper
  • 1 tablespoon red or white wine vinegar
  • 2–5 tablespoons virgin or extra virgin olive oil

  1. Put the oil, vinegar or lemon juice, sugar and salt and freshly ground black pepper in a screw-top jar and shake well to combine. (Alternatively, put all the ingredients in a bowl and whisk together.)
  2. Put the salt, pepper, mustard and sugar in a small bowl, add the vinegar and stir until the salt and sugar have dissolved. Gradually whisk in the olive oil, according to taste: for a smooth, mild dressing, add 4–5 tablespoons; for a sharper dressing, add just 2 tablespoons.
