A fresh vinaigrette dressing is perfect for salads or marinades. Freshly chopped herbs can be stirred into the finished dressing.

1/2 cup olive oil
1/2 teaspoon salt
freshly ground black pepper
1 1/2 tablespoons red or white wine vinegar or lemon juice
pinch of caster sugar
1/2 teaspoon mustard powder or 1 teaspoon Dijon mustard
1/4 teaspoon caster sugar
salt and freshly ground black pepper
1 tablespoon red or white wine vinegar
2–5 tablespoons virgin or extra virgin olive oil

Put the oil, vinegar or lemon juice, sugar and salt and freshly ground black pepper in a screw-top jar and shake well to combine. (Alternatively, put all the ingredients in a bowl and whisk together.)
Put the salt, pepper, mustard and sugar in a small bowl, add the vinegar and stir until the salt and sugar have dissolved. Gradually whisk in the olive oil, according to taste: for a smooth, mild dressing, add 4–5 tablespoons; for a sharper dressing, add just 2 tablespoons.
