Sweet potato and apple bake

Apples provide a nice complement to this dish, which abounds in vitamin C from the sweet potatoes, apples, onion and lemon juice as well as vitamin A and niacin from the sweet potatoes.

Serves: 4 

  • 1 tablespoon unsalted butter
  • 1 onion, finely chopped
  • 1 kg orange sweet potatoes, peeled and thinly sliced
  • 2 granny smith apples, cut into 2-cm-thick wedges
  • 3 tablespoons sugar
  • 2 tablespoons lemon juice
  • 3⁄4 cup (185 ml) salt-reduced chicken stock
  • 1⁄4 teaspoon pepper

  1. Preheat oven to 230°C. In very large non-stick frying pan, heat butter over moderate heat. Add onion and sauté for 5 minutes or until tender.
  2. Add sweet potatoes, apples, 2 tablespoons sugar and lemon juice, and cook until sugar has melted. Add stock and pepper, and bring to boil.
  3. Transfer mixture to a 19 × 28 cm glass baking dish. Cover with foil and bake for 25 minutes or until sweet potatoes are tender. Uncover, sprinkle with remaining 1 tablespoon sugar and bake for 10 minutes or until lightly browned.

I enjoyed this very much. I had it as a side dish with steamed barramundi and chilli. Next time I will use less sugar. - 28 Apr 2012
