Spinach with Sesame Seeds

    This is a simple recipe that anyone who appreciates fresh green vegetables will love. Spinach is a natural partner to sesame seeds and chilli flakes.

    Serves: 4 

    • 1 bunch spinach, about 500g, thick stems removed
    • pinch of chilli flakes
    • 2 teaspoons sesame oil
    • 1/2 teaspoon salt
    • 1 teaspoon lemon juice
    • 1 tablespoon sesame seeds, toasted

    1. Wash the spinach, then put it in a saucepan with just the water clinging to the leaves from washing. Add the chilli flakes and cook gently for 3–5 minutes until just wilted. Drain thoroughly, then transfer to a serving bowl.
    2. Sprinkle the spinach with the sesame oil, salt and lemon juice and toss to mix. Sprinkle with toasted sesame seeds, then serve at once.
