Saffron Pears

    Peeled pears poached in a white wine syrup. A vanilla bean, saffron threads and orange zest add incredible flavour and colour. Serve with crisp sweet biscuits on the side.

    Serves: 6 

    • 1 cup water
    • 1 cup white wine
    • 1 cup sugar
    • 1 vanilla bean, halved
    • 1/2 cinnamon stick
    • 1/2 teaspoon saffron threads
    • 2 teaspoons grated orange zest
    • 6 firm pears

    1. Combine all the ingredients, except the pears, in a saucepan in which the pears will fit snugly upright. Simmer for 3 to 4 minutes or until the sugar is dissolved.
    2. Meanwhile, peel the pears, leaving the stems intact. Add to the saucepan, cover, then simmer until the pears begin to take on a glazed appearance, about 1½hours.
    3. Close to serving time, remove the pears and reduce the syrup for 20 minutes or until it is almost toffee-like. Pour the syrup over the pears and serve with crisp sweet biscuits on the side.
