    This recipe creates a tangy blue cheese dressing with a twist of orange. It goes well with mixed bean, green or vegetable salads.

    Ingredients
    Serves: 10 

    • 50g Roquefort, Gorgonzola or any blue cheese
    • 1/2 cup (125ml) light sour cream
    • 2 tablespoons white wine vinegar
    • 3 tablespoons fresh orange juice
    • 1 tablespoon walnut oil
    • salt and freshly ground black pepper, to taste
    • generous pinch of sugar
    • 3 tablespoons coarsely chopped walnuts, optional

    1. Mash the cheese finely with a fork in a bowl. Add the sour cream and stir to make a smooth, creamy mixture.
    2. Add the vinegar, orange juice and walnut oil and mix well. Add salt, pepper and sugar, to taste. Stir in chopped walnuts, if using.
