Rocket Salad with Spicy Vinaigrette

This refreshing side dish or entrée has lots of vitamin C in the orange and its juice, the tomatoes and even the greens. The rocket is also very high in calcium.
1⁄2 cup (125 ml) orange juice
2 tablespoons red wine vinegar
2 teaspoons Tabasco sauce
1 teaspoon olive oil
1⁄4 teaspoon sugar
1⁄8 teaspoon pepper
500 g rocket leaves
2 cups torn cos lettuce
150 g yellow and/or red cherry tomatoes, halved
1 navel orange, peeled and sliced into half-rounds
6 oil-cured black olives, slivered
1⁄2 small red onion, thinly sliced
- In small bowl, whisk together orange juice, vinegar, Tabasco sauce, oil, sugar and pepper.
- In salad bowl, combine rocket, cos lettuce, tomatoes, orange, olives and onion. Add dressing, tossing to coat well. Serve immediately.
