Rocket and radicchio salad with tomatoes

Treviso is a type of radicchio that has long, narrow, pointed leaves, resembling witlof. It has a slightly milder bitter taste than round radicchio but either will do for this salad.

Serves: 4 

  • 250g cherry tomatoes
  • 1 small onion
  • 200g rocket
  • 1 head treviso or round radicchio
  • 4 tablespoons olive oil
  • 3 tablespoons balsamic vinegar
  • 1 clove garlic, crushed
  • salt and freshly ground black pepper
  • 50g Parmesan

  1. Cut tomatoes in half. Slice onion into thin rings. Layer rocket, radicchio, tomatoes and onion rings on a platter.
  2. Whisk oil, vinegar and garlic until combined. Add salt and pepper to taste. Using a vegetable peeler, slice Parmesan into large, thin shavings.
  3. Drizzle dressing over salad. Top with Parmesan.
