Treviso is a type of radicchio that has long, narrow, pointed leaves, resembling witlof. It has a slightly milder bitter taste than round radicchio but either will do for this salad.

Ingredients
Serves: 4
250g cherry tomatoes
1 small onion
200g rocket
1 head treviso or round radicchio
4 tablespoons olive oil
3 tablespoons balsamic vinegar
1 clove garlic, crushed
salt and freshly ground black pepper
50g Parmesan

Cut tomatoes in half. Slice onion into thin rings. Layer rocket, radicchio, tomatoes and onion rings on a platter.
Whisk oil, vinegar and garlic until combined. Add salt and pepper to taste. Using a vegetable peeler, slice Parmesan into large, thin shavings.
