Red onion & capsicum relish

    • 2 teaspoons olive oil
    • 3 cups diced red onions
    • 1 red capsicum, diced
    • 2 cloves garlic, crushed
    • 1/4 cup red wine vinegar
    • 3 teaspoons no-added-salt tomato paste
    • 2 teaspoons honey

    1. Heat the oil in a large nonstick frying pan over low heat. Cook the onions, capsicum and garlic gently for 30 minutes until tender.
    2. Add the vinegar, tomato paste and honey. Simmer for 2 minutes, then remove from the heat. Serve at room temperature.

    Fantastic recipe. It really hit the taste buds hard and got the juices flowin'. One thumb up as i only have one arm but back in my prime I'd give it two. I didn't have to change the recipe at all it all just flowed through smoothly and very well. Thanks all you rock!!  -  12 Apr 2012
