This is a great dressing for radicchio, rocket or any of those bitter greens. You can vary the types and amounts of the fresh herbs to suit the different ingredients or to whatever herbs are available.

2 teaspoons hazelnut oil
3 tablespoons canola or peanut oil
2 tablespoons raspberry or other fruit vinegar
1 tablespoon Dijon mustard
salt and ground white pepper
2 spring onions, finely chopped
1 tbsp each of chopped fresh parsley leaves, basil leaves, tarragon and dill

Whisk the two oils with the vinegar, mustard, salt and pepper. Add spring onions and finely chopped leaves of all the herbs.
