Bread Pudding Crumble
This delicious dessert is sort of a cross between bread pudding and apple crumble. It's easy with a ready made pie base.
Ingredients

- 3 eggs
- 250g apple purée
- 125g low-fat plain yoghurt
- 1 teaspoon vanilla essence
- 125g caster sugar
- 90g brown sugar
- 45g rolled oats
- 1 teaspoon ground cinnamon
- 140g bread cubes
- 2 apples, peeled, cored and chopped
- 4 tablespoons brown sugar
- 4 tablespoons plain flour
- 2 tablespoons butter
- 1 pie base

- Preheat oven to 180 degrees C.
- In a medium mixing bowl stir together eggs, apple purée, yoghurt, vanilla essence, caster sugar, 85g brown sugar, oats and cinnamon. Stir in bread cubes and apples. Pour into pie base.
- In another bowl, mix together the remaining brown sugar and flour. Rub in butter until mixture resembles coarse crumbs. Sprinkle on top of tart filling.
- Bake for 1 hour or until top is golden and fruit is tender.

I don't generally like bread pudding. I certainly have never made bread pudding. I was curious and made this on a whim.
