Garlic and Anchovy Linguine

If you are a fan of anchovies this is a quick and easy midweek meal that can be served within 15 minutes of having the desire to eat.

Serves: 6 

  • 4 cloves garlic, crushed
  • 4 to 6 tablespoons olive oil
  • 2 tablespoons chopped fresh parsley
  • 185g anchovy fillets
  • 1 cup water
  • 500g dried linguine

Preparation:5min  ›  Cook:10min  ›  Ready in:15min 

  1. Brown garlic in olive oil over medium heat. Stir in parsley and chopped anchovies. Add water, cover and simmer for a few minutes.
  2. Meanwhile, cook linguine according to packet instructions and drain. Toss with anchovy sauce and serve.

I agree Leon, I did not think it needed the water added...I upped the olive oil to about 1/4 cup and added some minced chillie for even more wow! I dont love parsley so did not put any in mine. If I think that a sauce needs a bit of "loosening" I add some of the pasta water to the sauce before straining the pasta. Really good pasta dish! - 24 May 2009
