Oven chips

    With these delicious oven chips, you get all the nutritional benefits of potato – with little of the fat of regular chips.

    Serves: 4 

    • 1 kg large baking potatoes or kumara (sweet potatoes), scrubbed but unpeeled
    • 2 teaspoons olive oil
    • good pinch of freshly ground black pepper

    1. Preheat the oven to 230°C. Place two baking trays in the oven to heat.
    2. Cut the potatoes lengthways into 1-cm slices, then cut the slices lengthways into 1-cm strips. In a large bowl, combine the oil and pepper. Add the potatoes and toss well so that they are evenly coated.
    3. Spread out the potatoes in a single layer on the hot baking trays. Return to the oven and bake, turning once, for 30–35 minutes or until browned, crisp and cooked through.

    Sorry, your dish won´t have any vitamin C because that vitamin is very sensitive to heat and it´s destroyed even when slightly heated.  -  17 Aug 2012
