Try this muesli bar and you'll never have a packet one again. Full of magic foods, this is a great snack to take to work or pack in the lunch box. Substitute your favourite mix of dried fruit or nuts.

Serves: 20 

  • ½ cup barley flakes
  • ¼ cup cloudy apple juice, heated
  • 1 cup traditional rolled oats
  • ¼ cup wholemeal self-raising flour
  • 2 tablespoons caster sugar (optional)
  • ⅓ cup chopped dried apricots
  • ⅓ cup sultanas
  • ¼ cup chopped dried apples
  • ¼ cup sweetened dried cranberries (craisins)
  • ⅓ cup chopped dates
  • ½ cup toasted chopped pecans
  • ¼ cup sunflower seeds
  • 60 g mono- or polyunsaturated margarine
  • ¼ cup honey
  • ½ teaspoon vanilla essence
  • 1 egg

Preparation:25min  ›  Cook:35min  ›  Ready in:1hour 

  1. Preheat the oven to 180°C and grease a 30- x 20-cm (base) lamington pan. Line the base and two long sides with baking paper extending paper a few centimetres above the pan to help with removing slice later.
  2. Place barley flakes in a heatproof bowl and pour warm apple juice over barley. Leave to stand while you chop up the dried fruit and pecans.
  3. In a large bowl mix together oats, flour, sugar, barley, dried fruit, pecans and seeds.
  4. In a small saucepan melt margarine with honey over a low heat. Cool a little, add vanilla extract and egg and stir to combine.
  5. Pour margarine mixture over oat mixture and mix very well. Press mixture into prepared pan and cook for 25 to 30 minutes until lightly golden. Leave in pan to cool.

These are quite nice - bit overloaded with fruit so they fell apart a bit. Will make again and use more oats and flour next time to balance out the amount of fruit. Nice with a cuppa tea. - 06 Feb 2010


It felt so retro making these but I forgot how good a home made muesli bar could taste. I didnt use the sugar-the honey is enough - 10 Jul 2009


Great flavours however it was a bit too chewy. I'd add less oats next time. - 02 Aug 2014
