Delicious. I reduced the recipe by 1/3, put half in the fridge and ate it as a tasty meal for one!

Very delicious, although I didn't add the mint because I didn't have any, used vegetable stock to make it vegetarian and substituted the raisins with currants (slightly tangier taste). I found it a bit fiddly getting all the spices into the pot, so I think next time will mix the spices in a bowl first (or maybe make up a batch of the mix to make the process easier for the next few times I make it!). I boiled it for 5-7 mins before adding the couscous in Step 3, as the zucchini and capsicum wasn't soft enough for my liking. I think that the recipe description could be slightly improved by separating out some of the steps into additional ones, and the list of ingredients more clearly into groups, as it would help with the preparation time, and would clarify why chicken stock is mentioned in two places. Could also remove the "1 1/4 cups" in Step , as that amount is already mentioned in the ingredients. Also, the recipe mentions adding cumin twice, but it's only mentioned once in the list of ingredients. Would have given it 5 stars if it had been a little easier to follow!

We had this as a main with pumpkin soup, tastes great and is easy to make.
