    A variety of flavours for the fillings makes these meringues all the more attractive for a special occasion.

    Ingredients
    Serves: 8 

    • FOR THE MERINGUES
    • 4 egg whites
    • 1 1/4 cups caster sugar
    • FOR THE FILLING
    • 2/3 cup thick cream, for filling
    • A little icing sugar, for sifting
    • FOR LEMON FLAVOURING
    • Finely grated rind of 1 lemon
    • 1 tablespoon lemon juice
    • 1 tablespoon icing sugar
    • FOR VANILLA FLAVOURING
    • 1/4 teaspoon vanilla extract
    • 1 teaspoon icing sugar
    • FOR COFFEE FLAVOURING
    • 1 1/2 tablespoons strong black coffee
    • 1 tablespoon icing sugar
    • FOR ORANGE LIQUEUR FLAVOURING
    • Finely grated rind of 1 small orange
    • 1 tablespoon Cointreau or Grand Marnier
    • 1 teaspoon icing sugar

    1. Preheat the oven to 110°C. Line two flat baking trays with nonstick baking paper. Make sure that the mixing bowl and whisk are perfectly clean and dry.
    2. Whisk the egg whites until stiff but not dry. If using an electric whisk, add the sugar, a tablespoon at a time, until it is all incorporated and the mixture is thick and glossy. If whisking by hand, add half the sugar, a tablespoon at a time, then fold in the rest.
    3. Using two tablespoons to make neat oval shapes, put 16 spoonfuls of the mixture on the baking trays, spacing them 2–3 cm apart. Bake in the preheated oven for 2–3 hours, or until the meringues are lightly coloured on the outside but still slightly soft, like a marshmallow, in the centre.
    4. Remove the meringues from the oven, allow to cool on the baking trays, then store in an airtight container until ready to fill.
    5. For the filling, whisk the chosen flavouring into the cream until thick but not buttery. Sandwich the meringues together with the cream, place on a large serving dish and sift the icing sugar lightly over them. Serve the meringues in paper cake cases, if you wish.
