Combine the 1/4 cup of sugar and the lime juice in a medium bowl. Add the kiwifruit, tossing to combine. Cover and refrigerate until serving time.
In a small bowl, combine the grated lime zest, ricotta, sour cream and the remaining sugar. Serve the kiwifruit with its syrup in dessert bowls, topped with the ricotta cream and the julienned lime zest.
Did you know?
Two kiwifruit – a healthy snack – supply more potassium than a medium banana. * One kiwifruit contains more vitamin C than a small orange.
I needed enough for at least 12 people and couldn't get enough kiwi on short notice, so I modified it by using a mix of kiwi, strawberries and blueberries. Absolutely wonderful! The only change I would make in the future is to add the strawberries immediately before serving, because the strawberries in the juice discolor the kiwi. (I may try it sometime with only kiwi and blueberries…) Amazingly delicious! - 14 Apr 2014
This was good. Definitely a 5 for ease. I served it up to guests as I had been given a lot of kiwi fruit. It went down really well. They all loved it & raved. When I told them how easy it was they raved even more & wanted the recipe. They all gave it a 4. - 08 Sep 2009
