Use large baking trays lined with baking paper. Combine the flour, ground almonds and sugar. Dot little pieces of butter on top and add the egg yolks.
Mix with electric beaters for about 1 minute until crumbly, then press dough together by hand. Divide dough into 3 pieces; shape into balls and wrap in cling wrap; chill in refrigerator for 30 minutes.
Preheat oven to 200°C. Roll out dough thinly on floured work surface or between 2 sheets of baking paper.
Cut out stars about 6 cm in diameter. Cut smaller stars out of the centre of half the stars. Bake all the stars for 10–12 minutes; place on a wire rack to cool.
Spread the cookies that have not had stars cut out of them thinly with jam. Sift the icing sugar thickly over the ones that have had stars cut out. Place an icing-sugar-coated cookie on top of each of the jam-covered ones. Dip remaining small stars in melted chocolate.
