A great summer BBQ recipe, these chicken and onion skewers and simple to prepare and are always a favourite of the kids. The parsley and yoghurt dipping sauce adds a refreshing and tangy flavour. Make sure you don't forget to soak your skewers or they will burn on the BBQ.
Chicken Skewers: Combine the paprika and coriander in a small bowl then add the cubed chicken and mix until the chicken is evenly coated. Thread the chicken and onion pieces onto the skewers, alternating as you go. Cook the chicken for 6-8 min or until cooked through.
Yoghurt Sauce: In a food processor puree the parsley, garlic, stock, lemon juice and yoghurt. Add salt to taste.
To Serve: Preheat the BBQ, cook each kebab until the chicken juices run clear. Serve chicken skewers hot with a drizzle of the Yoghurt sauce.
