Greek-style cos salad with lemon & fresh dill

Since we eat most salad leaves fresh and raw, they're a reliable source of vitamin C.

Serves: 4 

  • 1/4 cup lemon juice
  • 3 teaspoons olive oil
  • Salt
  • 1 medium cos lettuce, leaves torn
  • 1 teaspoon snipped fresh dill
  • 4 spring onions, thinly sliced
  • 125g feta cheese, crumbled

  1. Combine the lemon juice, oil and a pinch of salt in a large bowl, whisking to blend.
  2. Add the lettuce, dill and spring onions, tossing well. Add the feta and toss again.
