Greek-style cos salad with lemon & fresh dill

Since we eat most salad leaves fresh and raw, they're a reliable source of vitamin C.
1/4 cup lemon juice
3 teaspoons olive oil
1 medium cos lettuce, leaves torn
1 teaspoon snipped fresh dill
4 spring onions, thinly sliced
125g feta cheese, crumbled
- Combine the lemon juice, oil and a pinch of salt in a large bowl, whisking to blend.
- Add the lettuce, dill and spring onions, tossing well. Add the feta and toss again.
