Double chocolate chip muffins

    With more chocolate than you could ask for, these muffins are the most incredible treat.

    Serves: 12 

    • 175g dark chocolate, melted
    • 125g milk chocolate
    • 125g white chocolate
    • 65g cocoa powder
    • 325g self-raising flour
    • 125g brown sugar
    • 365ml milk
    • 100ml vegetable oil
    • 1tbsp baking powder
    • 2 eggs
    • 2 teaspoons vanilla essence

    1. Pre-heat oven to 180 degrees C and place patty cups in muffin trays.
    2. Roughly chop up milk and white chocolate and leave to one side.
    3. Sift the flour, baking powder and cocoa into a large bowl. Stir in the brown sugar.
    4. In another bowl, beat together the eggs, vegetable oil and milk.
    5. Add the wet ingredients to the dry mixture and stir until smooth. Add the two teaspoons of vanilla essence for extra flavour.
    6. Melt the 175g dark chocolate and quickly stir into the mixture before it cools. After a minute or two the mixture should become quite stiff.
    7. Add the chopped chocolate and spoon final mixture into the muffin trays.
    8. Bake for approx 20 minutes. Check with a skewer that the muffins are cooked right through.
    9. Place muffins on a rack to cool and sprinkle with grated chocolate or icing sugar.
