Fresh blueberry jam

Blueberries are flavoured with fresh orange peel, cinnamon, and vanilla in this easy jam recipe.
3 cups blueberries
1 cup sugar
2 tablespoons lemon juice
4 strips orange zest, about 7x1 cm each
1/2 teaspoon cinnamon
1 teaspoon vanilla essence

- Sterilise two 1-cup glass jars and their lids.
- Combine the blueberries, sugar, lemon juice, orange zest, cinnamon and a pinch of salt in a medium saucepan and cook over moderate heat, stirring frequently, for 20 minutes or until thick.
- Remove from the heat. Discard the zest and stir in the vanilla essence. Spoon the jam into the sterilised jars, cover and cool.
Blueberries are packed with pectin (a form of soluble fibre) as well as vitamin C, and are also very rich in antioxidants, including anthocyanosides, pigments from which the fruit gets its colour.
