This simple, economical bowtie pasta recipe is easily varied: you can use smoked chicken or turkey or a combination of spicy cooked sausage, salami and ham. Butter Beans are the blonde coloured string beans.

Ingredients

300 g farfalle (bowtie) pasta
400 g fresh butter beans, trimmed
6 sprigs thyme
1⁄2 teaspoon salt
250 g ham, in one piece
2 shallots, finely diced
4 large red radishes, cut into quarters, for garnish
PAPRIKA SOUR CREAM DRESSING
200 g light sour cream
1 tablespoon vegetable oil
2 tablespoons herb vinegar
salt and freshly ground black pepper
1⁄4 teaspoon ground sweet paprika

Cook pasta in plenty of lightly salted boiling water until al dente, following packet instructions. Drain, rinse under cold running water and leave to cool.
Place beans, 3 sprigs thyme and 1⁄2 teaspoon salt in a saucepan and cover with water. Cook, covered, until crisp-tender, 5-10 minutes. Drain, reserving cooking water. Briefly immerse in iced water and drain again.
Trim ham of excess fat and cut into narrow strips. Combine pasta, beans, shallots and ham in a large bowl. Finely chop leaves from remaining 3 sprigs thyme.
To make the dressing, mix sour cream, 2 tablespoons cooking water, oil, vinegar, salt, pepper, sweet paprika and chopped thyme in a bowl until creamy.
Stir dressing into salad. Divide salad among serving bowls and garnish with radishes.
