Creamy Broccoli Soup

A super easy broccoli soup using frozen broccoli. Adjust the cayenne pepper to your personal taste.
1 onion, chopped
2 teaspoons olive oil
1 packet (300g) frozen broccoli
2 cups chicken stock
1 teaspoon dried oregano
1 cup skim milk
- Cook the onion in the oil in a medium saucepan until translucent.
- Add the broccoli, stock, oregano and a pinch of cayenne pepper. Simmer until the broccoli is crisp-tender.
- Purée the mixture in a blender. Return to the saucepan and add the milk. Gently heat through.
