A super easy broccoli soup using frozen broccoli. Adjust the cayenne pepper to your personal taste.

Serves: 4 

  • 1 onion, chopped
  • 2 teaspoons olive oil
  • 1 packet (300g) frozen broccoli
  • 2 cups chicken stock
  • 1 teaspoon dried oregano
  • cayenne pepper
  • 1 cup skim milk

Preparation:15min  ›  Cook:25min  ›  Ready in:40min 

  1. Cook the onion in the oil in a medium saucepan until translucent.
  2. Add the broccoli, stock, oregano and a pinch of cayenne pepper. Simmer until the broccoli is crisp-tender.
  3. Purée the mixture in a blender. Return to the saucepan and add the milk. Gently heat through.
