    Use chicken mince and a sweet potato mash topping to lighten up the classic shepherd's pie. Baked in individual dishes, these small pies make the perfect lunches or light dinners for adults and kids alike.

    Ingredients
    Serves: 6 

    • FILLING
    • 2 teaspoons olive oil or canola oil
    • 1 medium onion, chopped
    • 1 large carrot, diced
    • 2 garlic cloves, crushed
    • 1/2 teaspoon dried thyme
    • 600g lean chicken mince
    • 400g tin diced tomatoes
    • 2 tablespoons tomato paste
    • 2 teaspoons Worcestershire sauce
    • 1 cup reduced-salt chicken stock
    • 1 cup frozen green peas
    • freshly ground black pepper to taste
    • TOPPING
    • 800g sweet potatoes, peeled and cut into chunks
    • 2 tablespoons low-fat milk, warmed
    • freshly ground black pepper to taste
    • 2 teaspoons margarine

    1. Preheat oven to 200 degrees C. Spray six 1-cup-capacity ovenproof dishes with cooking oil.
    2. Heat oil in a large saucepan. Add onion and carrot; cook over medium-high heat, stirring often, until softened, 2 to 4 minutes. Add garlic and thyme; cook, stirring, for 30 seconds. Add chicken mince and cook over medium heat, breaking up with a wooden spoon, until no longer pink. Stir in tomatoes, tomato paste, Worcestershire sauce and stock and bring to the boil, stirring. Simmer, stirring occasionally, until carrot is tender and sauce is reduced, about 15 to 20 minutes. Stir in peas. Season with pepper. Spoon chicken mixture evenly into baking dishes.
    3. To prepare the topping: place sweet potatoes in a large saucepan. Add water to cover and bring to a simmer. Reduce the heat to medium, cover and simmer until sweet potatoes are tender, 10 to 15 minutes. Drain and return sweet potatoes to saucepan. Mash and gradually stir in margarine and enough milk to make a spreadable consistency. Season with pepper. Spoon sweet potato mixture over the chicken filling. Use the back of a spoon to cover filling and make decorative swirls.
    4. Place the dishes on a baking tray and cook until the filling is bubbling and the topping is heated through, about 30 to 35 minutes.

    tip

    Try lean turkey mince instead of chicken mince.
