Best Ever Raspberry Sorbet

Refreshing and fruity, this is the perfect sorbet for a summers day. If you can't find fresh raspberries frozen will do!

Ingredients
Serves: 20
- 150g caster sugar
- 50ml mineral water
- 900g fresh good quality raspberries
- 1 tablespoon lemon juice

Ready in:30min
- Pour the sugar and water in to a heavy based pot and place over a low heat until sugar dissolves, bring to the boil and cool.
- When cool add the raspberries and lemon juice to the syrup in a food processor and puree.
- Strain the pureed mixture through a fine sieve to remove the seeds and transfer to an ice-cream maker and freeze according to the instruction book…probably 20-30 minutes.
