Best Ever Raspberry Sorbet

    Refreshing and fruity, this is the perfect sorbet for a summers day. If you can't find fresh raspberries frozen will do!

    Serves: 20 

    • 150g caster sugar
    • 50ml mineral water
    • 900g fresh good quality raspberries
    • 1 tablespoon lemon juice

    Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Pour the sugar and water in to a heavy based pot and place over a low heat until sugar dissolves, bring to the boil and cool.
    2. When cool add the raspberries and lemon juice to the syrup in a food processor and puree.
    3. Strain the pureed mixture through a fine sieve to remove the seeds and transfer to an ice-cream maker and freeze according to the instruction book…probably 20-30 minutes.
