Ingredients
750g lean turkey mince
2 medium carrots, peeled and finely shredded
3 spring onions, finely chopped
2 tablespoons salt-reduced soy sauce
2 teaspoons finely chopped, peeled fresh ginger
¼ teaspoon salt
¼ teaspoon black pepper
Preparation method
1.
Preheat grill. Combine turkey mince, carrot, spring onion, soy sauce, ginger, salt and pepper in a medium bowl. Shape into 6 patties.

Grill burgers 10 cm from heat for 5 minutes. Turn over and grill 4-5 mins or until no longer pink in the centre.

Place the burgers on bread rolls with lettuce and tomato, or serve on a bed of thin noodles with finely sliced capsicum and spring onions, tossed with a few drops of dark sesame oil. Cucumber slices in rice vinegar make a refreshing side dish.
